BBQ Baked Potato

This one-pot BBQ Baked Potato recipe is so easy to prepare and can be on the table in less than 25 minutes. It’s hearty, tangy and sticks to the ribs. The only problem with it was that my kid wanted to nibble on the chicken the entire time we were cooking!

BBQ Baked Potato Recipe

Prep Time: 5 mins  Cooking Time: 20 mins

Ingredients:
4 baking potatoes
1 rotisseri chicken
1 1/2 cup tangy BBQ sauce
1/2 cup cheddar cheese

Scrub 4 potatoes and poke liberally with a fork.  Place in microwave on 5 minute intervals turning in between intervals until done. (Potatoes are done when they are soft.) Meanwhile, cut all the meat off the rotisserie chicken and chop or shred into small pieces. Place pieces in a small pot, add BBQ sauce an simmer over medium heat until warm. Turn heat down and let simmer until potatoes are done. When potatoes are ready, split them each down the center. Divide BBQ chicken evenly among all potatoes and top with cheddar cheese. Serve piping hot.
