Baked Spinach & Rice

My kid really likes the taste of packaged rice pilaf. I prefer to make it from scratch, but I must admit that both Whole Foods and Trader Joes have some pre-packaged rice mixes that are very good and don’t contain a ton of junk. If you’ve been following the blog, you know how I love to take packaged things and turn them into household favorites. This recipe uses packaged rice as a base for a baked spinach and rice recipe. It is incredibly decadent but it did get my little Popeye to eat spinach!

Baked Spinach & Rice Recipe

Prep Time: 25 mins (mostly unattended)  Cooking Time: 30 mins

Ingredients:
1 package rice pilaf
1 box frozen chopped spinach
1 cup mozzarella cheese
2 eggs
1/4 cup lowfat milk

Defrost spinach and squeeze dry. Set aside. Preheat the oven to 325 degrees. Cook rice according to package directions and transfer to a large bowl. Stir in chopped spinach, cheese, milk and eggs. Pour into greased square baking dish and cook for 30 minutes or until set. Let cool for 5 minutes before cutting into squares for serving. Serves 4 to 6.

I just found your blog and I'm loving the concept. I don't cook with my daughter but I think I might have to start. I love your recipes and will definitely be trying a bunch. I love that I usually have a lot of the ingredients that you use already in my pantry or fridge.

My apologies. It should be made at 325 degrees. I updated the recipe. How did it come out at 350?

I made this last night and there was no oven temperature. Can you post that for future reference. I did it at 350 but not sure if that was right…

my baby and i both loved this. rice is such a huge comfort food for me, this will be one of my go-to recipes. my only complaint is that i served it alone, and maybe i was too hungry by the time it was done, but i felt like i had to eat a lot of it to feel full. next time i'll serve it as a side to a meat.

I made this tonight! My first recipe that I've made off your blog. I used cheddar because that is what I had, and I'm glad I did. It turned out great and my toddler gobbled it up. woo!
