Baked Oatmeal

“They” say oatmeal is heart healthy, but let’s face it, it’s BORING!  This recipe is a terrific yet healthy alternative to instant oatmeal and can be made the night before and just popped into the oven the next morning for a hearty and delicious breakfast that sticks to the ribs.

Baked Oatmeal

Prep Time: 10 mins  Cooking Time: 25 to 28 mins

Ingredients
1 tablespoon melted butter or canola oil
1 teaspoon baking powder
1/2 cup unsweetened apple sauce
1 teaspoon ground cinnamon
2 tablespoons brown sugar
1 1/2 cups old fashioned oats
1 egg
1 cup lowfat milk
1 apple (peeled and sliced into very thin pieces)
1/2 cup dried cranberries
cooking spray
extra cinnamon for sprinkling
extra brown sugar for sprinkling
1/2 cup warm lowfat milk for serving

Preheat oven 350 degrees. In a medium sized bowl combine egg, milk, applesauce and melted butter (or canola oil).  Add oats, brown sugar, baking powder, and cinnamon. Stir to combine. Mix in dried cranberries and pour batter into well greased 9 inch square baking pan.  Spread batter evenly and place apple slices in rows on top. Sprinkle lightly with cinnamon and brown sugar.  Bake for 25 to 28 minutes. Scoop into bowl and add a generous splash of warm milk.  Serves 4.

Upon trying this breakfast treat, my kid said “the apples are soooooo good they taste like cinnamon and sugar!” and then proceeded to pick all the apples out of my bowl. He also wanted to eat the leftovers for dinner last night.

Breakfast is served!

    I made this for my entire family when we all got together – there were 12 of us so we tripled the recipe and it turned out great. Everyone ate it, kids and adults, big hit with all.
