Easy Lemon Caper Chicken

My kid recently discovered that he likes capers. Sometimes he asks for some straight out of the jar. He thinks it’s finger food! This evening he requested a spoonful, so I decided it was time to make something with them. After a quick survey of the fridge, I noted 1 large organic boneless organic chicken breast and some lemons. It was slim pickin’ but we made it work — all in one pan!

After pounding out the chicken (one of my kid’s fave activities) we use the lemon squeezer to juice two lemons.

Then we heated up some olive oil and added a couple of tablespoons of capers.

Broccoli Cheddar Biscuit Muffins

In the past I’ve mentioned that my kid and I were both delighted to find ready to bake biscuits in the refrigerated section of Trader Joe’s. These biscuits taste every bit as sinful as the Pillsbury kind but have none of that artificial crap in them. They may not be from scratch but they bake up to be pretty darn dee-lish!

We started with a the Trader Joe’s biscuits as a base and we pretended we were planting a garden. First, my kid dug the hole, then he planted the broccoli and finally sprinkled it with cheese. We put it in the oven and biscuit puffed up in a muffin shape all around the fillings. The broccoli on top got slightly roasted which made it even better than expected. Perfect S’mores

Perfect Smores

You might remember from our S’mores Bars Recipe that S’mores are one of my all time favorite deserts. There are lots of different opinions on what makes the perfect s’more. Some like their marshmallows perfectly browned but not burnt. Others like the marshmallow to catch fire. Some like a traditional thin bar of milk chocolate, others prefer a piece of king size dark chocolate bar.

I thought a lot about what makes the perfect s’more during our drive down to Palm Springs. We rented a house with friends for the holiday weekend and I knew from the pictures that it had a fire pit in the back yard.

Breakfast Polenta

Breakfast can get really repetitive in our house, so we decided to mix things up this morning with a vegetarian friendly breakfast polenta. My kid wakes up very hungry so I tried to speed the process along with a little help of the microwave. *Gasp* It doesn’t taste microwaved. I promise.

Believe it or not using veggie sausage made this dish incredibly flavorful. My kid asked for some extra veggie sausage on the side. I obliged and we enjoyed a nice family breakfast veggie style. Now for the recipe…

Triple Berry Skillet Cake

When I was 16 I spent a summer as mother’s helper on Drake’s Island in Maine. Drake’s Island is just over the bridge from Kennebunkport – famed summer home of George H. W. Bush. It is the definition of picturesque and at the time I probably didn’t appreciate it as much as I should have.  (In case you’re not familiar with the term “mother’s helper” it is when a stay-at-home mom hires a young person to assist her in caring for the kids. In this case, I spent a summer helping my aunt’s friend.) The family I lived with had so many fascinating interests including being Friends of the Shakers. I loved when they went on excursions because they often brought back a triple berry coffee cake from a local farm. This cake was amazing and it took an awful lot of self control not to eat it all after the kids went to bed. I’ve dreamed of that cake a million times but never attempted it until now. My kid and I made it a tad bit healthier by using whole wheat pastry flour but it tasted just as amazing.

It turns out when I’m not trying to be polite I will devour an entire triple berry cake in one weekend. I had a little help from my little one and the big one as well. (Have I ever mentioned my husband is 6 foot 4?) I would say that we’ll be making this again soon, but I think I’d better not for fear that I will super-size myself! Now for the recipe…
