One of my kid’s all time favorite snacks is a frozen Stonyfield Farms YoKids yogurt squeezer. Here’s what great about freezing them: a) a frozen squeezer tastes like a frozen yogurt pop b) freezing the squeezer keeps it fresh when you are on the run (ie: we freeze and then take it with us and by the time he eats it it’s yogurt again – no longer frozen). Frozen Yogurt Squeezers Recipe

Ingredients:
1 box Frozen Yogurt Squeezers

Snack Time: Quinoa Cruch Parfait

We’re crazy for quinoa in this house. We also love a good yogurt parfait. So when we found this awesome Quinoa Crunch Recipe we were ready to give it a go! The result was a crunch-tastic snack that I will be having for breakfast, lunch and dinner… and everything in between.

It’s starts with dry quinoa. You can use red or white.  Then you add a little canola oil and agave.

Then you spread it out on a Silpat (or just a non-stick cookie sheet) and bake it until it’s crunchy. It’s perfectly sweet and adds just the right amount of texture to a bowl of fruit and yogurt. Now for the recipe…

Snack Time: Homemade Chips & Salsa

My dear friend, Anne, suggested we make homemade salsa for snack week. I thought it was an excellent idea because I knew we could customize all the ingredients. She insisted that it must be made with cilantro – this really made me laugh because cilantro is like krypotnite to my husband. I swear if you made a giant bowl of soup and only put one leaf in he could still taste it. So, cilantro FREE salsa was our plan.

My kid immediately got to work squeezing some lemons and limes. This is one of his favorite activities.

Anne suggested we use grape tomatoes and just throw them in the food processor. This was a brilliant idea.

Oh, and we upped the ante by baking our own tortilla chips. We used a small pizza cutter to make the triangles in the corn tortillas. What do you think my kid liked best? Now for the recipe…

I imaged these Turkey Cucumber Wheels as open-faced cucumbers with a dab of cream cheese topped off with a bit of shaved turkey, but my kid had other plans. He turned the idea into these mini sandwiches. They’re a little more messy this way (cream cheese makes them slide a bit) but just as good.
