Open Face Avocado Patty Melt

My freshman year college roommate was recently in Los Angeles for business and we were lucky enough to have her as a house guest. My kid just loves when people stay over. He was scheming before she even got here and upon her arrival he immediately start whispering meal ideas in my ear.

To my surprise he suggested we make mini turkey burgers with avocado stuffed into them. I honestly have no clue where this idea came from but I wasn’t going to stand in the way of a budding Iron Chef.

The Easiest Enchiladas

This week has been crazy busy for me. It’s the kind of week where I’ve been cursing my cooking commitment – oh how I’ve dreamed of making chicken nuggets in the toaster and slicing up an apple. The discipline has been good for me though. It has forced me to come up with some really quick and easy meals like the Mini Meatball Grinders and these super easy enchiladas.

We were even able to satisfy both the vegetarian and non-vegetarian household members by making half of the batch with chicken, spinach and cheese and the other half with spinach and cheese only. Ole!  Now for the recipe…

Waffle Iron French Toast

Waffle Iron French Toast

When we’re in a rush and we want that home cooked breakfast feeling, we turn regular old wheat bread into Waffle Iron French toast. I love it because it’s easy but my kid L-O-V-E-S it because it transforms bread into waffles.

All we do is cut off the crusts of some bread and then whisk up a couple of eggs and some milk in a shallow bowl or baking dish.

We add syrup at this stage instead of drizzling it on at the end. That way my kid can take the waffle in the car if he wants but still have that syrup taste. Then we dip the bread in and cook it on the waffle iron.

We finish it off with a dusting of cinnamon powdered sugar.

Oatmeal ‘Raisinet’ Cookies

Oatmeal Raisinet Cookies

My friend, Susan, eats chocolate covered raisins by the handful. I have witnessed this and it also comes up in conversation far more often than you’d imagine. Susan has figured out all the benefits of eating chocolate raisins including the fact that they are a good source of iron. Susan’s ‘health’ claim has inspired us to keep chocolate covered raisins in our own cabinet. Now we know why she can’t stop eating them. Susan!

Oatmeal Raisinet Cookies

We figured if the chocolate covered raisins were this good straight out of the package, they would be even better in a classic oatmeal raisin cookie. This is a pretty awesome way to dress up your oatmeal cookies!

We used Trader Joe’s chocolate covered raisins to make both a ‘healthier’ version and a classic version of oatmeal raisin cookies. My kid liked the healthier version better. Who knew?! Now for the recipe…

Mini Meatball Parmesan Grinders

Mini Meatball Parmesan Grinders

When I was a kid my mom was pretty awesome about making dinner every night but on a rare occasion she’d suggest we pick up “grinders” from the local sub shop. This generally happened on a very busy night when we were all starrrrrrrving. We’d order: 1 meatball parm, 1 eggplant parm and 1 chicken parm and ask them to cut each grinder into 4 pieces. Oh how I loved the warm and soft yet toasty bread smothered in sauce and cheese.

Last week I was trying to figure out what to make for dinner while my kid was nibbling on soft dinner roll. The roll reminded me of those grinder buns and I realized I had all the ingredients to make a sort of mini meatball parmesan grinder – you know, sort of like a meatball slider.
