Swell Supper: Thanksgiving Menu

It’s the same question every Thanksgiving: how do you get all the food hot and ready on the table at the same time? Have no fear. I’ve got a step-by-step guide to an incredibly simple Thanksgiving Day menu that makes it easier to serve it everything at once while it’s all warm. And the kids can help, too! All you have to do is get that turkey in the oven first thing in the morning. Here’s what we are serving up for sides this Thanksgiving: Cranberry Sauce Trio, Herbed Crock Pot Stuffing, Mashed Potato Pie, Baked Sweet Potatoes and Apples, Nutty Caramelized Cauliflower, and keep the kids busy decorating with Gobbling Cupcakes. Last week we got our CSA veggie box and we managed to use all of our loot, creating some new recipes and discovering how many are quick and easy and are going to make the hectic Thanksgiving week a whole lot easier to get meals on the table. Apologies for quite possibly the most boring post ever with a mediocre (at best) photograph but I felt that I owed it to you to share our new household favorite.

Remember when we planted tomatoes right in the bag of soil this summer?  Well, at the beginning of this week we picked our last ripe tomato and used it to make a little Greek chop salad.  We mixed in some of our potted herbs that are still going strong!

Then we warmed up a whole wheat pita, carefully opened the pouch and stuffed the salad in.  I’ve recreated this every single day this week.  OBSESSED. Read more after the jump…

We are deep in the throes of Thanksgiving planning over here – trying to fit all the test recipes in before the big day.  By “we” I mean “me” – my husband doesn’t cook and the kids are busy stealing the food while I’m trying to prep it.

This is not Cooking With My Kid, this is coaxing my kid off the bed while she’s eating an apple we’re supposed to be using to bake a cake.  (For the record, she ate that HUGE apple in its entirety.)

Even though I was short one apple, this recipe is a KEEPER.  And a perfect alternative to an apple pie on Thanksgiving.

Pretzel Dips

Pretzels were always one of my favorite snacks when I was a kid. And as a babysitter, they are a staple snack food.  These white-chocolate dipped pretzel rods are one of my favorite after-school snack treats to make with the kids. The best part is that not only are they a delicious treat, they are really fun to make too.

We make it extra quick and easy by microwaving the white chocolate morsels. It smells so good, you’ll want to eat it immediately, but it’s best to let the chocolate dry first.

Once in a while, we all make something that comes out tasting so delicious that we can hardly believe we made it ourselves. These pretzels come out looking so pretty, we can hardly believe we made them ourselves! They are a perfect activity for a birthday party, or to make for holiday gifts. Read more after the jump…
