Turkey BLT With Avocado Spread
My kid has fallen in love with bacon. Before you get all up in arms, let me explain that it’s turkey bacon and it’s nitrate free and organic. It’s the only bacon he knows and he cannot get enough of it.
The other morning when he was celebrating his second piece of bacon, I realized he’d never had a BLT – one of the greatest sandwiches ever invented.
To my great joy and wonderment, he is now eating both tomatoes and lettuce. These were both on the “don’t even put it on my plate” list for quite some time. He’s loved avocado since 6 month of age so instead of mayo, we mashed up some avocados for the sandwich.
We made the bacon and toasted the bread together and then I assembled it while he was getting dressed. I was so excited to hear what he thought when he got home from school. I’m delighted to report that it was a hit! Now for the recipe…
Turkey BLT With Avocado Spread Recipe
Prep Time: 5 min Cooking Time: 10 mins
Ingredients:
3 to 4 slices turkey bacon
3 slices of tomato
1/2 small ripe avocado, mashed
1 large leaf lettuce (we used romaine)
2 slices of wheat bread
Cook turkey bacon in a frying pan until done but not super crispy. Place on a paper towel and lightly toast the bread. Spread a thin layer of avocado spread on the toasted bread and add the turkey bacon, lettuce and tomato. Cut in half and enjoy!
