Snack Time: Baked Apples

Snack Time: Baked Apples

What you are looking at is a s’mores baked apple. There’s chocolate, graham cracker and marshmallow baked inside this delightful treat. As if that wasn’t good enough, we also made one with brown sugar, cinnamon and marshmallow. Now before you go off thinking this is an unhealthy snack, hear me out! It’s not THAT bad for a treat.

Snack Time: Baked Apples

For the s’mores stuffed apple we used 1/2 a smore’s candy treat (about 35 calories) and one large marshmallow (22 calories) and a small apple (approx 55 calories). When you think about it 99 calories for a decadent after school snack is pretty awesome.

Snack Time: Baked Apples

For the s’mores candy I used these brand new treats from Trader Joe’s. You could do the stuffing yourself with a graham cracker, chocolate chips and marshmallow.

Snack Time: Baked Apples

We also stuffed another apple with cinnamon, brown sugar and a marshmallow on top. I really don’t know which one I liked better.

Snack Time: Baked Apples

My kid was very into the stuffing process and very definitive about liking the cinnamon sugar one best. Now for the recipes…

Baked Apple Recipes

Prep Time: 10 mins  Cooking Time: 45 mins

S’mores Baked Apple Ingredients:
1 granny smith or gala apple
1 s’mores treat (Available at Trader Joe’s) coarsely chopped
(alternatively use 1/2 graham cracker crumbled + 5 or 6 chocolate chips)
1 large marshmallow

Cinnamon Sugar Baked Apple Ingredients:
1 granny smith or gala apple
1 tablespoon brown sugar mixed with 1/2 teaspoon cinnamon
1 large marshmallow

Preheat the oven to 375 degrees. Core apple leaving the bottom intact. Peel 1/3 of the skin from the top of the apple. Stuff one apple with the s’mores treat leaving room at the top to push a marshmallow in. Stuff one apple with cinnamon sugar leaving room at the top to push a marshmallow in. Push one marshmallow into each apple and place standing up in a small baking dish. Pour some water into the bottom of the baking dish (about 1/2 inch) and bake for 45 minutes or until apples are tender but not mushy. Split open and serve warm.

I am a faithful follower of your blog, and can't wait to try this recipe. Apple crisp is a favorite in our house, so I know this one will be a huge hit. Your son reminds me a lot of my own 6-year-old because he too loves tattoos, and he loves to help me bake. We also have a newborn baby girl in our house, so I definitely appreciate that you are able to keep up your blog. I too have a blog dedicated to my son and our love of books, and actually did a post a few weeks ago that was inspired by cookingwithmykid. If you're interested you can check it out here: http://marshmallowmondays.wordpress.com/2010/08/1… (I mention your blog at the end). Just wanted to let you know how much I love that you are another mom with a blog dedicated to the special way you bond with your son.

Love your blog, and this looks very yummy. Can I plead with you to return to a full RSS feed instead of a preview feed? I understand why so many are doing this (greater click through rate), but it's hugely inconvenient for your readers. Please reconsider. Thanks

I used to make (microwaved) baked apples for myself after school when I was a kid. Always with brown sugar and raisins. But the brown sugar would inevitably fall out the bottom of the cored apple when cooked. I wonder if putting the marshmallow in the bottom would keep everything tucked inside?

    Yum!
    And worth a try!

My DH does a version of this with bananas for our toddler.
We treat it like dessert instead of a snack but I think it should translate.
He adds butter to a pot and then slowly, over low heat cooks the banana. Sometimes he adds sugar, sometimes he adds rum. The banana turns into a soft, warm, carmelized pudding-y thing. I suppose it is a version of Bananas Foster. And if you start it when you start eating dinner, it's ready to go in time for dessert!
