Baby Daddy Dinner Revealed

My husband is not only one year older but he’s also one year wiser thanks to the spinach packed birthday dinner surprise we created for him this past weekend. The whole meal was built around an idea from our reader, Shannon, who encouraged us to make corn chowder after we posted an urgent plea for vegetarian friendly meal ideas. The soup was a terrific idea and we enjoyed every slurp even as we experienced record high temperatures here in Los Angeles. So many of you posted great veggie-friendly ideas that we’ve tucked them away for use on a future day. In the meantime, I thought you’d like to see how dinner shaped up. We made corn chowder, deep dish spinach pie and a butter lettuce garden herb salad.

Well, I hate to disappoint, but it’s after midnight and I have a 6-month old who will be waking me up at 4:30am. You can’t blame a girl for wanting a mere 4 hours sleep! Stay tuned and check back soon for these seriously yummy veggie friendly dinner recipes.

    Oh yay you made the spinach pie!!! That is our favorite "special" dish. My kids always beg me for it! Looks like yours turned out beautifully. Did you use filo for the crust?

    well, I made the southwest shrimp and corn chowder tonight, with farm-share fresh corn and potatoes instead of frozen. And it was delish, so I hope you'll try it sometime. Unless you are allergic to shellfish. Then you should skip it.
