Baby Daddy Birthday Help!
Pardon the brief interruption from snack week, but we’re hoping you can help us think of an easy, vegetarian friendly dinner idea for the daddy of the house. That’s him (above) at a cafe in Paris Cira 2007. No, he is not double fisting! He’s about to hand me a beer (see below).
It’s his birthday this weekend and my kid and I are hoping to make him something extra special. As you know, he’s a vegetarian. Got any brilliant ideas for us? Please and thank you.

If your local farmer's market still has sweet corn I'd say corn chowder! Or maybe homemade sauce over eggplant parmesan. Oh, and I love the Star Wars apron!

I second the corn chowder! I have a yummy corn chowder recipe on my blog using tofu.
Or maybe meatless lasagna? If it's still hot where you are, I have a cool no-bake lasagna recipe (again, on my blog) using homemade ricotta. Definitely special enough for a birthday.
Nigella Lawson's onion pie is incredible! Onions cooked in olive oil and butter,salt, pepper and thyme, topped with a cheese scone dough. Delicious!

grilled marinated tofu (in an orange soy marinade) with grilled veggies over sticky rice? It's one of my favorites!

A yummy veggie lasagne and a great wine to go with it. You could also have toasted ravioli for starter YUM-O. Ofcourse some lovely candles to enhance the romance…that goes without saying. Have a good time!

I heart portobello's, so I would make the ina garten recipe below or…. Grilled marinated portobello mushrooms with diced roma tomatoes mixed with olive oil salt and pepper with fresh mozzarella melted on top. Bruscetta style. Rachel Ray has a similar recipe.

The easiest vegetarian dish my kids love and actually know how to make is a penne pasta dish with onions, spinach & cherry tomatoes. Just sautee the onions and tomatoes in olive oil until you like them, toss them with the pasta and add a hand full of spinach, drizzle with olive oil and your done. Sometimes I add capers when I want it to be a little salty. Yummy! And not much mess in the kitchen.

The empanadas are time consuming but the Russian Potato Salad and the Gallo Rice are quick and the chimichurri sauce can be made ahead of time.

What about choosing a fun theme for his birthday dinner? Like you could decorate the dining space and go all out. For example, you could do a Chinese theme and make stir-fry and other veggie Chinese foods and decorate the table with origami and fun chinese food boxes (at craft stores) with food in them. Or Indian food with Indian decor. Maybe that's too involved? I just think it would be fun for the whole family and would make for a special birthday.
