Here is another remake of a not-so-healthy after school snack, the classic Hot Pocket. This baby sitter friendly meal is an updated version of the “hot meal in a pocket” is not only much healthier than the super processed frozen kind, it takes about the same amount of time as unwrapping one from it’s plastic wrapping and placing it in the microwave.

We used our favorite veggies for this one, but I’m sure it would be great with others such as red and green peppers, mushrooms, even olives if you like! And even though chopping the crunchy veggies (which only takes a minute) remains the baby sitter’s job, there’s plenty for a kid to do.  I have the kiddos toss together the vegetables with the cheese parsley and then they get to stuff it in to to the pita.

They are so good, you had better have your sitter make extra because even though this recipe is so kid-tastic, you’ll want one too. Now for the recipe…

Healthy Hot Pockets

Prep Time: 10 minutes Cook Time: 2 minutes

Ingredients

1 piece whole wheat pita bread, cut in half
1 small cucumber, finely chopped
1/2 tomato, finely chopped
1/2 cup broccoli, cut in to small florets
1/2 cup mozzarella cheese, grated
1 tablespoon fresh parsley, chopped

In a medium bowl, toss together, cucumber, tomato, broccoli, mozzarella cheese and parsley. Generously stuff a halved pita with vegetable and cheese filling. Place in a toaster oven at 350 degrees and toast for 5 minutes, or until cheese has melted and pita is slightly toasted.

    I made this and it was really good! I simplified it even more though by microwaving it. It actually was not bad at all. I put ham and cheese in mine. I was running low on veggies. Still tasty!
