Baked Apple Donuts

I stopped by a cake store the other day and noticed they had donut pans. I asked about them and I was told they were for baking donuts. I’d never heard of baking a donut, but I was intrigued enough to buy a pan. After researching a lot of different recipes, I cobbled together my own to make these tasty and somewhat healthy donuts.

My kid was really excited about the prospect of donuts especially since I had the idea of making them with apples and cinnamon. Watching them grow in the oven and sprinkling on the powdered sugar were highlights of the baking process. We’re excited to share this recipe with our friends at Prudent Baby who made the “heart attack” version of these last week (Apple Fritters)! Now for the recipe…

Baked Apple Donut Recipe

Prep Time: 10 mins  Cooking Time: 10 mins

1 cup all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
pinch of salt
1 egg (lightly beaten)
1 6 oz container of non fat vanilla yogurt
1 tablespoon canola oil
2 teaspoons lemon juice
1 to 2 tablespoons honey
1 apple (diced small)
1 teaspoon cinnamon
2 tablespoons sugar
powdered sugar for dusting

Preheat the oven to 400 degrees. Toss apples in cinnamon and sugar and set aside. In a large bowl whisk together all the dry ingredients. In another bowl stir together oil, lemon juice, honey, egg and yogurt. Make a hole in the center of the dry ingredients and pour the wet ingredients into the hole. Gently fold everything together until combined. Sprinkle apples into a greased donut pan and divide batter evenly in the pan. (I used the cooking spray that has flour in it but I think any kind would work.) The batter will be pretty thick and airy. We found it was easier to scoop it into the donut pan with our hands. Before baking be sure to clean off any stray dough around the circle so there’s a hole in the middle of the donut. Bake for 10 minutes or until golden brown. Let cool for a few moments and then flip over onto a cooling rack while still warm. Dust with powdered sugar and serve immediately! Makes 6 donuts.

    If I made these without apples, would I need to increase any of the other ingredients or just leave them out?

    If you leave out the apples you should add either a tablespoon or two of sugar or a tablespoon of honey. They will not be sweet enough without. Also, you can sub chocolate chips for apples. (Don't toss the chocolate chips in cinnamon/sugar!)

    this seems like it would be easy enough to vegan-ize with soy yogurt subbed for dairy yogurt and apple sauce subbed for egg (also, it would be lower fat and kinder to critters) but i'm making them the original way right now.

    Replace the egg with either apple sauce (mixed results) or Ener-G Egg Replacer (wonderful stuff), the yogurt with soy yogurt (no difference) and the honey with Agave Nectar. Perfecto!

    They are SO GOOD!!! I just made them in a muffin tin and it made 12. They are very lowfat and healthy since they use yogurt and honey in place of most of the oil and sugar – and no deep frying!!!!

    I'm visiting my Gramp's house and my Gram had a donut pan. I remembered your recipes…and I looked back to show them to my kid. The first thing he noticed with this recipe was the glitter tatoo your kid is wearing. My SIL bought a tatoo kit and decorated us all 2 weeks ago. :0) I'm hoping to enjoy a donut with my coffee tomorrow…now to see if I have all the ingredients here.
