Little ‘Ritas
As a kid, nothing said ‘ tropical summer fun’ more than virgin pina coladas or virgin strawberry daiquiris. I vividly remember sitting by the pool sipping one of these frosty drinks giggling with my little girlfriends. Even today, I can almost taste it. When we were planing our Cinco de Mayo celebration, I considered introducing my daughter to these blended childhood favorites, but as an adult there’s nothing that says Cinco de Mayo more than a margarita.
Then it hit me, my kids like lemonade. Why wouldn’t they like a virgin version of a margarita? It’s basically a frozen lemonade? Does it get better than that? No!
We had so much fun inventing this recipe and blending it up! But, truthfully, my favorite part was watching my daughter take that first sip and giggling with my girl as we both shared our first Little ‘Rita.
Little ‘Ritas
Prep time: 5 mins
Ingredients:
1/4 cup fresh lime juice
1/8 cup fresh lemon juice
4 tablespoons agave syrup
1/8 cup orange juice
2 1/2 cups ice
1 Lime sliced
1. Place all ingredients (except the sliced lime) into the blender and turn on high for 1 minutes.
2. Pour into clear plastic cups, garnish with a lime slice and straw.
Makes: 4 kid-sized servings

Is there something that can be substituted for Agave? I’m not sure where to find it, or what else I’d use it for again.
