Pureed Broccoli Soup

One veggie my kid has always liked is broccoli.  It is so boring to serve steamed broccoli several nights a week, but I like giving it to him because it is high in calcium. (Since he’s not a fan of milk, I’m on a constant mission to sneak in some calcium.) The farmer’s market had some great looking broccoli so we bought a few heads and headed home to whip up some soup.

Ingredients:
2 lbs broccoli (chopped into florets)
1 baking potato (peeled and diced large)
3 cloves pressed garlic
1 onion diced
4 to 6 cups low sodium vegetable broth
2 tablespoons olive oil
salt & pepper

Saute onions with olive oil over medium heat in a large pot until translucent.  Add pressed garlic and saute for another 2 minutes. Stir in broccoli and potato and add broth until veggies are covered. Bring to a boil then cover and simmer on low for 20 minutes. Remove from heat and scoop into blender a few ladles at a time. It is very important to only fill blender 1/2 way to allow for steam to escape. Cover blender but leave hole in top open. Place a kitchen towel over hole and blend on low until combined. Pour into fresh pot. Repeat until all is blended. Return pot to stove top and heat on low. Add salt and pepper to taste.

This is a very light soup – it is not to be confused with cream of broccoli, but it is filling. Something interesting I have learned is that my kid likes anything that has been put in the blender, he thinks it is so fun and cool to watch it blend! He ate an entire bowl of green soup. I was shocked yet delighted!

Mom tip: I bought my kid a Batman themed Thermos soup container so that he can take soup to school. It comes in very handy on rainy days or when it’s chilly out.
