Pasta with Bacon & Peas
This is one of my new favorite dishes because it is a) easy to make b) tasty and c) rather healthy (especially if made with whole wheat pasta). I came up with the idea after another little session with my new cookbook Jamie’s Food Revolution: Rediscover How to Cook Simple, Delicious, Affordable Meals. Jaime’s quick tomato sauce is the base of the recipe, the rest is all improvisation by my kid and me. Isn’t that what cooking is all about?

- Popping out basil.
- Frozen peas.
- Pouring in tomatoes.
- Working the saute.
We chose to make this with bacon and peas because my kid loves turkey bacon and really enjoys popping peas into his mouth. He also thinks its super cool that we don’t have to cook the peas – instead we just drain the pasta over the frozen peas and they come out perfect every time. He really liked this meal and so did my husband who was provided with an alternate version which had veggie bacon pieces instead of turkey. Now for the recipe…
Pasta with Bacon & Peas Recipe
Prep Time: 10 mins Cooking Time: 20 mins
Ingredients:
2 cloves of garlic
bunch of fresh basil (or basil cubes)
salt & fresh ground pepper
5 slices turkey bacon
2 cups peas
2 tablespoons olive oil
1 14 oz can of diced tomatoes
Grated Parmesan cheese
basil for garnish
1/2 pound of pasta (your choice!)
Preheat the oven to 400 degrees. Place the strips of turkey bacon on a greased cookie sheet and cook for 15 minutes or until done. When done, chop bacon into quarter inch bits. Bring a large pot of water to a boil and cook the pasta to al dente (around 8 minutes). Meanwhile peel and finely slice the garlic. Finely chop the basil or pop out 2 frozen basil cubes. In a large saucepan heat two tablespoons of olive oil over medium heat. Add the garlic. Then add the basil. Cook for another few moments and add the canned tomatoes. Turn the heat up to high and add salt and pepper. Place frozen peas in a colander and drain the pasta right over the peas. Transfer pasta and peas to the pan of sauce and the bacon bits and stir well. Garnish with basil and serve with grated parmesan.

how do you make basil cubes??
Trader Joe's sells chopped basil in frozen cubes. It's perfect for popping into the pan and cooking. If you don't have a Trader Joe's near you fresh basil will work just fine.
What kind of pasta did you use ? It looks almost like udon.
It's Italian Pasta by a company called Rustichella D'abruzzo. It's a specialty shape that only they make called Pasta al Ceppo. I bought the Pasta at a specialty store because it looked so good to me!
