I’ve always loved banana pudding and I’ve also always thought it was pretty healthy as desserts go. My all time favorite banana pudding is from Magnolia Bakery, and all these years I’ve been scarfing it down having NO CLUE that it is just drowning in 3 CUPS OF HEAVY CREAM and an entire package of condensed milk. Not to mention the pudding mix and vanilla wafers.

Still, I knew the kids would love it and I had the brilliant idea of using animal crackers instead of vanilla wafers to make it. So… I searched high and low to find a way to make it a lowfat version of one of my favorite childhood (and adulthood) treats.

The recipe I modified came from the Cabot Cheese website of all places and it contains lowfat yogurt instead of all that cream. It totally works and has all that great banana-y, pudding-y goodness without all the fat and sugar.

Topping it off with animal crackers makes this easy-to-make treat totally irresistible.

Low Fat Animal Cracker Banana Pudding Recipe

Prep Time: 8 mins

Ingredients:
1 (3.4-ounce) box vanilla instant pudding mix
1 1/2 cups reduced-fat or skim milk
3/4 cup Plain Greek-Style Lowfat Yogurt (2%)
1 teaspoon pure vanilla extract
2 to 3 cups animal crackers
2 to 3 ripe medium bananas, sliced

1. In medium bowl, combine pudding mix, milk, yogurt and vanilla; beat with whisk for two minutes.
2.In a trifle bowl layer animal crackers, sliced bananas then pudding mixture. Continue until all of the mixture is used up ending with the pudding mixture.
3. Decorate the top with animal crackers and a few slices of banana.
4. Cover with plastic wrap and refrigerate for 1 to 2 hours or until it’s set.

Makes: 6 servings

    I am going to have to try this one. I LOVE banana pudding. I think I ate it nearly daily when I was pregnant with Princess Persistent. I also think that since animal crackers are more firm than nilla wafers they will get soggy slower than the nillas do.
