Yogurt Waffles
You know the type of dad who always coaches the little league team? You know the type of mom who shows up to every home AND away game? I know the type intimately. It’s not my baby daddy, it’s not me… it’s my parents and it’s a tough act to follow but it’s still paying off!
This past weekend the Beaver Cleaver house I grew up in was just humming away with my super supportive parents staging a Cooking With My Kid event before I was even out of bed. Check out my mom and my kid whisking up waffles as my dad snapped pictures.
“We cooked with your kid” they exclaimed as I wiped sleep from my eyes. My mom even showed my kid how to get honey from a real honey comb. Now for the recipe…
Yogurt Waffle Recipe
adapted from Taste of Home [1]
Prep Time: 5 mins Cooking Time: 5 to 8 mins
Ingredients:
3/4 cups all-purpose flour
1/2 cup whole wheat flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
pinch of salt
2 cups non fat vanilla yogurt
1/4 cup butter, melted + cooled
1 egg
2 egg whites
2 tablespoons honey
Preheat your waffle iron. In a large bowl whisk together flours, baking powder, baking soda and salt. In a smaller bowl whisk together yogurt, butter, eggs and honey until smooth. Make a well in the dry ingredients and fold in the wet until just combined. Pour into the waffle iron and cook until golden brown. Makes 6 waffles.
