Sunshine Smoothie
My mother in law sent us an edible arrangement for Valentine’s day and my kid flipped for the fruit skewers. We ate as much as we could the first day and stored the rest in glass containers in the fridge. Later in the week we got creative with the fruit and made melon smoothies for breakfast. It was unusually refreshing and unbelievably pretty especially with the melon garnish.
Ingredients:
1 cup pineapple
1 1/2 cup honey dew
1 1/2 cup cantaloupe
1 cup lowfat milk
2 cups ice
sliced cantaloupe for garnish
Puree pineapple by placing pineapples into the blender and blending until smooth. Add milk, honey dew and cantaloupe and blend on high. When blended, add the ice and blend until all ice is crushed. Pour into drinking glass and garnish with a slice of cantaloupe. Insert straw and enjoy.
