Hi! Heather the babysitter here bring you another babysitter friendly snack. Remember those amazing Apple Cheddar waffle sandwiches we made last week? Well, they were so good that we had to try them a couple different ways. I am personally obsessed with the banana and peanut butter combination. I could happily eat a piece of toast topped with peanut butter and bananas every morning for the rest of my life. I’ve noticed that kids seem to like this combination too, which is great because it’s healthy. We used the famous combo inside of our waffle sandwiches and took my favorite breakfast treat to the next level.

We’re keeping it simple for the babysitter and using waffle mix. Kids love to help stir the mix together. The waffle iron requires attentive adult supervision, but smearing on the peanut butter and arranging the banana slices are fun kid-friendly jobs.

Since the bananas give a nice sweetness to the sandwich, you don’t need to drench them in sugary maple syrup. Instead you have a fruit and protein-rich addition to your kids day!

PS:  The baby did have bit of peanut butter. I promise I’m not a terrible sitter! Her momma was there and suggested it. Her pediatrician said that they now say babies CAN have food containing peanuts (as long as there is no history of allergies). Crazy how quickly things change!

Banana and Peanut Butter Waffle Sammich

Prep Time: 5 minutes Cook Time: 5 minutes

Ingredients:
whole wheat waffle mix
1 banana, sliced into 1/2 inch circles
2 tablespoons creamy peanut butter
cooking spray (for waffle iron)

Make waffle mix as directed. When batter is completely combined and ready, heat waffle iron to medium-low heat and spray with cooking spray. Ladle waffle mix into waffle iron and cook for 2 minutes, or until just cooked through. The waffle should be light colored at this point. Remove waffle from iron and place on a cutting board to cool for a moment. Using a bread knife carefully cut the waffle horizontally through the middle to form two halves. Slather peanut butter on both pieces of waffle  and banana slices in the middle. Sandwich the pieces together and return to waffle iron. Press down on the waffle iron and cook on medium-high heat peanut butter is slightly melted and waffle is golden brown, about 3 minutes. Remove from iron and place on a cutting board to slice diagonally.
