Savory Sitter: Apple and Cheddar Waffle Sammich

Pardon the interruption from Healthy Family Cookbook week, but Heather the babysitter is here to bring you another babysitter-friendly snack idea. When I was kid, my mom would always try to get us to eat our veggies and finish our dinner so we wouldn’t be hungry before bed. Unfortunately, this didn’t always work and I’d often yell from underneath my rainbow comforter in my bedroom. “Mom! I’m hungry!” If I was lucky, she’d show up a few minutes later with a plate full of apple slices and sliced cheddar cheese.  For this reason, I love the apples and cheddar cheese combo. (Also because it’s delicious).

And to make the childhood snack even more fun and nutritious, we made warm waffle sandwiches with the tasty combo as filling. I used waffle mix in order to keep things quick and simple for the babysitter.  But I always encourage a homemade version too! This is really quick to make and it’s fun and mouthwatering to watch the cheese melt between the waffles.

Stirring up the waffle mix with water is a great activity for a kid and eating it is even more fun. Although, once they see that waffle, they’re going to want it. This particular waffle never had a chance of becoming a sandwich. Now for the recipe…

Apple and Cheddar Waffle Sammich

Prep Time: 5 minutes Cook Time: 5 minutes

Ingredients:
whole wheat waffle mix
sliced cheddar cheese
apples, thinly sliced
cooking spray (for waffle iron)

Make waffle mix as directed. When batter is completely combined and ready, heat waffle iron to medium-low heat and spray with cooking spray. Ladle waffle mix into waffle iron and cook for 2 minutes, or until just cooked through. The waffle should be light colored at this point. Remove waffle from iron and place on a cutting board to cool for a moment. Using a bread knife carefully cut the waffle horizontally through the middle to form two halves. Place cheese slices on both pieces of waffle  and apple slices in the middle. Sandwich the pieces together and return to waffle iron. Press down on the waffle iron and cook on medium-high heat until cheese melts and waffle is golden brown, about 3 minutes. Remove from iron and place on a cutting board to slice diagonally.
