One Dish Breakfast: Salsa Baked Eggs

My super stylish friend, Kay, sent an email last week about a yummy recipe she’d come up with. She called it a  “one dish, no face time, and a hot healthy breakfast.” She also mentioned I could do my hair or makeup while it was in the oven. So you can officially think of this as a beauty secret and a breakfast.

I love a hot breakfast and I’ll take any advice that allows me to turn my naturally curly hair into smooth, shiny straight hair. Not to mention the fact that baked eggs are one of my faves.

One Dish Breakfast: Salsa Baked Eggs

The kids had their own plans for the oven time. They ate this entire bag of dehydrated blueberries in one sitting and then proceeded to get blue on everything they touched while my husband was in charge. (I was, of course, doing my hair!)

One Dish Breakfast: Salsa Baked Eggs

Prep Time: 5 mins  Cooking Time: 15 mins

Ingredients:
1 tablespoon salsa
2 handfuls baby spinach leaves
2 eggs
salt & pepper

1. Preheat oven to 400 degrees
2. Cover bottom of small oven safe cookware or ramekin with salsa
3. Layer fresh spinach on top of salsa
4. Crack two eggs on top of the spinach
5. Put dish in oven, cook till egg is set, about 15 min.
6. Add salt and pepper to taste and serve directly out of dish but careful not to burn the ones you love!

Makes: 1 serving

    I love it! It is also "core" which means all the folks on Weight Watchers (me) can eat it! Thanks for the tip. I am going to make this tomorrow morning, but with only 1 egg (sadly) ha ha.

    I squeezed in as much adult sized handfuls of spinach as possible and then just pressed it down with my hand before cracking the eggs on top. Note: I am shrimpy so my adult hands are maybe somewhere in between kid and adult.

    I made this this morning with one egg and some turkey bacon in the bottom – yum! Delicious and easy idea. I turned the oven on, put hot rollers in my hair, came back to put the dish in the oven, and then took the hot rollers out and styled while it cooked!

    If you don't have ramekins, Corelle cereal bowls would work really well too!
