Oatmeal 2 Go

My kids both love oatmeal but sometimes we just don’t have the time to sit down and eat a whole bowlful. Granola bars don’t do the trick for my hungry 5 year old, but when Macki [1]told me about these awesome oatmeal bars I knew we’d have an instant hit.

The great thing about these bars is that they taste just like oatmeal – like if you could pick up a bowl of oatmeal and take it along with you without any mess, they’d taste like this. My kid was so excited that twice I had to chop extra apples to replace the ones he’d snacked on while we were cooking.

Both kids went wild for these very dense, moist Oatmeal 2 Go bars. We had them for breakfast, lunch and dinner and had to make another batch the next morning. Macki, you are a genius! Now for the recipe…

Oatmeal 2 Go Recipe

Prep Time: 8 mins  Cooking Time: 30 to 35 mins

Ingredients:
1 medium apple, peeled + diced small
1 teaspoon granulated sugar
1 teaspoon cinnamon
1 cup whole wheat flour
1 cup unsweetened apple sauce
1 tablespoon melted butter or canola oil
1 teaspoon baking powder
1/2 cup almond meal
2 tablespoons brown sugar
1 1/2 cups old fashioned oats
1 egg
1 cup lowfat or nonfat milk
1 teaspoon vanilla
cooking spray

Preheat oven 350 degrees. Place diced apples in a small bowl and toss with cinnamon and sugar. Set aside. In a medium sized bowl combine egg, milk, applesauce, vanilla and canola oil.  In another bowl whisk together flour, almond meal, brown sugar and baking powder. Gently combine the wet and dry ingredients. Add oats and diced apples and stir to combine. Pour batter into well greased 9 inch square baking pan.  Spread batter evenly and bake for 30 to 35 minutes or until set. Let cool and cut into squares.
