Our week-long Valentine’s recipe series (and GIVEAWAY!) kicked off this morning with an awesome breakfast of hugs and kisses pancakes. My kid thought it was out of this world and the baby nearly ate him under the table. After explaining that Xs and Os represent hugs and kisses we got to work making them.
My kid loved using the mini whisk to make the batter. We made this Valentine’s day recipe with whole wheat flour, lowfat buttermilk and very little sugar so they’re pretty healthy as pancakes go.
The Os made for some pretty fun times – they became eye glasses, rings and even bracelets for the baby. I guess I missed the parenting class where they said not to let your kids play with their food!

Hugs & Kisses Pancake Recipe
Prep Time: 12 mins Cooking Time: 5 to 10 mins
Ingredients:
2 cups whole wheat flour (I prefer Whole Wheat Pastry Flour)
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
pinch of salt
2 eggs
2 cups lowfat buttermilk
2 tablespoons butter (melted) or vegetable oil
Preheat your griddle on medium heat. In a medium bowl, whisk together dry ingredients. Set aside. In a large bowl whisk together wet ingredients. Combine wet and dry being careful not to over mix. Throw some water on the griddle. If it sizzles, it is ready. Turn down the heat to medium-low and grease the griddle with cooking spray. Use a small ladle or squirt bottle to place the pancake batter onto the griddle forming X and O shapes. Wait until you see bubbles before you flip the pancake. Pancakes are done when they are golden brown. Sprinkle with powdered sugar and serve. Makes approximately 20 pancakes.
