Home Baked Holidays Extended: Holiday Granola

Home Baked Holidays Extended: Holiday Granola

Over the weekend my son begged for a new batch of granola so we made a special holiday version of our favorite breakfast food and decided to add it to the Home Baked Holidays series.

Home Baked Holidays Extended: Holiday Granola

While the granola was baking my kid got right to work cutting out labels to affix to the bags. He’s now officially obsessed with labels. Hmmmm…. I wonder why.

He was really excited to try our holiday granola and asked to make a parfait as soon as it came out of the oven. He trimmed up his label in-between bites of granola and determined that it is his favorite batch yet. You can download these adorable Homemade Holiday Granola labels here. Now for the recipe…

Orange Cranberry Holiday Granola Recipe

Prep Time: 10 mins  Cooking Time: 45 mins

Ingredients:
1/3 cup honey
1/3 cup melted butter (you can also use veg oil / we used butter to make it special!)
1/4 cup orange juice
4 cups old-fashioned rolled oats
3/4 cup sliced almonds
1/2 cup shredded, sweetened coconut
1/2 cup dried orange flavored cranberries (regular cranberries are OK too)
handful of pepitas
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Preheat oven to 300 degrees. Wisk together honey, oil, cinnamon, nutmeg and orange juice. Set aside. Combine oats, almonds, pepitas and coconut in a large bowl and toss with the honey mixture until evenly moistened. Spread it out on a rimmed cookie sheet lined with a Silpat (or parchment paper). Bake for 45 minute, stirring once or twice to evenly brown. Remove from oven and stir in the cranberries. Cool completely on the cookie sheet before storing in airtight container or bags. (Note: this can go from brown to overcooked quite quickly. When you get close to the end of the cooking time, check often!)

Your "normal" (???) granola recipe is the only granola I've ever made, and I am NEVER without it. I re-make it all the time so I don't run out. Somehow I ran out yesterday and didn't have time to make it today, so maybe I'll make this tomorrow. It sounds like a fun twist on the original, and I have all the ingredients. :-)

Looks great, how many portions does it make? Any idea of where to purchase the bags?
