Grilled Peach & Brown Sugar Oatmeal
My dear friend Jackie who moved to Hotlanta a few years back, posted this on Facebook the other day:
I’m in a serious cooking funk these days. So hard to get up the energy when it’s 95+ degrees out! What are you all cooking these days? (I mean other than fried eggs on sidewalks.)
I replied: grill, grill, grill. Which is what I do when it’s toooo hot. But then I realized that I’d never made a single breakfast on the grill.
The next morning, I woke up to 2 ripe peaches just begging to be used up before they went south. So, I sliced the peaches into rings, put a pot of water up for oatmeal and fired up the grill.
I sprayed the peaches, grilled ‘em and when everything was done, I set up a make-your-own oatmeal bar. The grilled peaches gave the oatmeal a sort of smokey flavor and made for a wonderful breakfast treat!! Now I’m dying for more grill-able breakfast ideas. Got any to share?

Grilled Peach & Brown Sugar Oatmeal
Prep Time: 5 mins Cooking Time: 5 to 10 mins
Ingredients:
2 cups oats
1 cup water
2 ripe peaches (not too soft!)
brown sugar
raisins
slivered almonds
olive oil or veggie cooking spray
1. Preheat the grill to 350 degrees. Peel and slice peaches in rounds.
2. Bring water to a boil on the stove top.
3. Spray peaches liberally with oil and place on grill.
4. Add oats to water and turn down to simmer.
5. Grill peaches 2 minutes and flip. Cook to desired tenderness.
6. Once oatmeal is done, dish into 4 bowls and set up topping bar with raisins, peaches, brown sugar and almonds. Enjoy!

Looks so yummy! A version with grilled pineapple and coconut would be delicious as well.
I just stopped by to see what your blog was all about. I was pleasantly welcomed by the love you have for you children and family. The recipes and warmth is just awesome to see in your generation.

My kids are not a fan of peach or oatmeal but this recipe did the trick. I tried this with a variety of fruits that we had because someone gave us a fruit basket for Christmas. The children were so attracted with how it looks that they didn’t bother to know what it is. They just ate it.
Place the peaches cut side down on the grill until browned. Remove from the grill, cut into wedges and place into a gratin dish. To the peaches add half the butter , half the brown sugar and half the cinnamon, and toss. Add the remaining butter, sugar and cinnamon to the granola in a small bowl and toss until combined, adding more butter if needed. Top the peaches with the granola mixture and place the gratin dish onto the grill. Close and bake until the peaches and granola are golden brown, about 15 minutes.
