Easy Breakfast Burritos
Ah, the breakfast burrito. It’s one of my fave menu items and is usually stuffed with a million delicious things. I’m somewhat deficient at getting a whole ton of stuff rolled up into a burrito so in our house, we have to settle for an easy streamlined version of the breakfast burrito.
Our breakfast burritos are stuffed with just three ingredients: refried beans, eggs and cheese. We take a can of vegetarian refried beans, dump them into a bowl and heat them up in the micro while we’re scrambling up our eggs.
We warm the tortilla (also in the micro) for about 20 seconds and spread some refried beans on the bottom of the tortilla. The scrambled eggs go on top followed by a sprinkling of cheese. Then we’re ready to roll!
I’ve found that rolling works best when your ingredients are slightly off center. Then you can tuck the ingredients right in at the beginning and fold in the sides as your roll the rest of the way.
If your kid likes a naked burrito (like mine does) you can keep it warm by wrapping it in tin foil and putting it in the toaster oven at 250 degrees while you dress your own burrito in a little salsa and another sprinkling of cheese. Melt that in your broiler and breakfast is served.
Look at that burrito monster! So scary I could eat him right up.
Easy Breakfast Burrito Recipe
Prep Time: 5 mins Cooking Time: 5 to 10 mins
Ingredients:
1 can vegetarian beans, warmed
1 egg per burrito
splash of milk
shredded cheddar or Mexican blend cheese
1 whole wheat tortilla per burrito
salsa
Whisk together eggs and a splash of milk and scramble in a frying pan over medium low heat until light and fluffy. (You don’t need more than one per burrito, they won’t fit!) Wrap tortillas in a damp paper towel and warm in microwave for 20 to 30 seconds. Build your burrito by spreading a thin layer of veggie beans on the tortilla, add one scrambled egg on top of the beans and sprinkle with cheese. Roll up your burrito tucking the sides in as you go and wrap rolled burrito in tin foil and keep warm in the oven at 250. Unwrap burritos and serve naked or place the unwrapped burritos on a cookie sheet, top with a spoonful of salsa and sprinkling of cheddar cheese and place under the broiler until cheese melts. Transfer to a plate and serve hot.
