Breakfast Fiesta!
It’s back to school time! To start the (pre)school year off right my friends Susan, Georgeann and I planned a Teacher Appreciation breakfast at the school this week. Nearly 60 teacher and administrators attended. We wanted to do something a little different so we hired a taco cart (only $300 for 60 people!) and decorated with pinatas and bright colored linens. Here’s a little peak at our Fiesta:
Susan had the brilliant idea of filling flower pots with fresh fruit for centerpieces. She had a vision of creating less waste by making everything consumable. I really loved that concept.
The taco guy was scrambling up fresh eggs on the griddle so they were nice and hot. Eggs were served atop cheese filled Chile Renellos or cheese quesadillas. Yummy potato and bean burritos were a great compliment to the eggs.
Catus and salsa salad made for a perfect authentic garnish.
Of course we had a seriously HUGE vat of guacamole. I can never get enough of it!
And no breakfast fiesta is complete without some chilaquiles and Spanish style rice. All the teacher’s plates were piled high with serious Mexican deliciousness. I feel really lucky to be sending my kid to a school he truly enjoys and I was thrilled to be a part of doing something great for the teachers and administrators who make it all possible.
PS: The churros (top picture) were from the freezer section at Smart & Final. The price was also incredible. 25 Churros for about $7.50. All you do is put them directly on your oven rack and bake for 7 minutes and then sprinkle with cinnamon and sugar. Mmmmm.

What a great idea! Who is the caterer? The cost seems very reasonable.

No recipes. We hired a taco cart! That's the best kind of recipe, right?
Oh, I wish I had them. My recipe was calling the 'taco guy' and having him come cook! It's a great way to throw a party.

I didn't realize you could get frozen churros – genius! And the best recipe is reservations, right?
Love the taco guy – he'll be at my next party – maybe even making tacos. Love the display even more, especially the terra cotta pots. They're a great way to present fresh foods. I was looking for a way to give a little homemade jams away and think some fresh fruit, jams and bread in a clay pot would be awesome. Thanks for always inspiring!
