Blueberry Granola
Recently, when strolling through the aisles of Trader Joe’s I spotted a beautiful jar of blueberry juice. It looked so delicious I plucked it off the shelf and added it to my cart having no idea what I’d do with it.
First thing we did was a taste test. It passed with flying colors and delivered the added benefit of enabling an exciting blue mustache.
Then we decided to make one of our household faves out of it… granola.
The color of the pre-cooked granola was magnificent. Such a gorgeous shade of purplish blue.
Too bad the color baked right off…
But it tasted awesome. We’re working our way through this jar eating it non-stop.
Blueberry Granola Recipe
Prep Time: 10 mins Cooking Time: 55 mins
Ingredients:
1/3 cup honey
1/3 cup canola oil
1/2 cup blueberry juice
4 cups old-fashioned rolled oats
3/4 cup slivered almonds
1 cup dried blueberries
handful of pepitas
Preheat oven to 300 degrees. Wisk together honey, oil and juice. Set aside. Combine oats, almonds and pepitas in a large bowl and toss with the honey mixture until evenly moistened. Spread it out on a rimmed cookie sheet lined with a Silpat (or parchment paper). Bake for 55 minutes to an hour, stirring once or twice to evenly brown. Remove from oven and stir in the cherries and raisins. Cool completely on the cookie sheet before storing in airtight container or bags.
Makes: 10 servings
