Baked Apple French Toast

In honor of our first baby girl play date with Adele and Story, we made up this Baked Apple French Toast recipe. It was breeze to put together (can be made the night before!) and was the perfect thing to just pop in the oven right before the gals arrived.

I must admit that I wasn’t sure how this was going to come out because my kid couldn’t stop sampling all the ingredients. The proportions were off, but it tasted oh so right. This is now one of his favorite breakfast recipes ever. Now for the recipe…

Baked Apple French Toast Recipe

Prep Time: 15 mins Cooking Time: 40 to 50 mins

Ingredients:
4 slices thick cut cinnamon swirl bread
1/3 cup sugar
4 large eggs
4 egg whites
2 cups lowfat milk
1 teaspoon vanilla extract
2 teaspoons cinnamon
2 medium granny smith apples (sliced into thin 1/4 inch pieces)
powdered sugar for dusting
maple syrup for serving

Cut cinnamon swirl bread into one inch cubes, place in a large bowl and set aside. In a medium bowl, whisk together eggs, egg whites, vanilla and milk. Sprinkle sugar over bread cubes and then add egg mixture. Stir in cinnamon and apples. Pour into a greased 13×9 baking dish and let sit in the fridge for at least two hours. Can be left overnight. When ready to cook, preheat oven to 350 degrees and bake for 40 to 50  minutes or until set. Let cool for 5 minutes before serving. Dust with powdered sugar and drizzle each serving with maple syrup.  Serves 4 to 6.
