I have a pancake problem. I blame my mother. I really think she ruined me on pancakes forever. It was the 1980s and other moms were hands deep in the Bisquick box. Not my mom. She refused Bisquick. Actually, she despised it. She looked down her nose at Bisquick pancakes and would insist that making buttermilk pancakes from scratch was worth the extra effort. Sleepover parties were never the same; except at my house, of course.

Maybe I should have gone to therapy because I’ve clearly passed on the pancake problem to my kid. Oatmeal Pancakes, Whole Wheat Pancakes, German Apple Pancakes, Pumpkin Pancakes. HELP! Or don’t. Because you haven’t gotten the details on the apple cinnamon whole wheat pancakes and you’re gonna want them.

Apple Cinnamon Whole Wheat Pancakes

Now for the recipe…

Apple Cinnamon Whole Wheat Pancakes Recipe

Prep Time: 12 mins  Cooking Time: 5 to 10 mins

Ingredients:
2 cups whole wheat flour (I prefer Whole Wheat Pastry Flour)
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
pinch of salt
2 eggs
2 cups lowfat buttermilk
2 tablespoons butter (melted)
2 apples, diced very small (granny smith or gala)
2 teaspoons cinnamon
1 teaspoon sugar
1 teaspoon lemon juice

Preheat your griddle on medium heat. In a small bowl toss together apples, lemon juice and 1 teaspoon of cinnamon. Set aside. In a medium bowl, whisk together remaining teaspoon of cinnamon with the rest of the dry ingredients. Set aside. In a large bowl whisk together wet ingredients. Combine wet and dry being careful not to over mix. Throw some water on the griddle. If it sizzles, it is ready. Turn down the heat to medium-low and grease the griddle with cooking spray. Ladle the pancake batter onto the griddle. Let cook a moment then sprinkle each pancake with some diced apples and wait until you see bubbles before you flip the pancake. Pancakes are done when they are golden brown. Makes approximately 20 pancakes.
