Super Bowl Series: Mediterranean 7 Layer Dip
J-E-T-S! Jets! Jets! Jets! My father has had season tickets to the Jets for as long as I can remember. I’ve been to more than my share of games, making chocolate chip pancakes in the parking lot on a chilly morning surrounded by hopeful fans who were disappointed every season but some how managed to continue the support for their favorite team. Looks like this year my father (and brothers) finally have something to be proud of. Even if their precious Jets don’t make it all the way to the big game. In honor of the die hard football fans in my life we’re doing a week-long series called devoted to Super Bowl recipes. They’ll all be classic Super Bowl recipes with a twist. This one is just like the classic 7 layer dip recipe but we made it Mediterranean style.
Layer 1: hummus.
Layer 2: homemade tzatziki
Layer 3: chopped tomatoes
Layer 4: sliced black olives
Layer 5: crumbled feta
Layer 6: toasted pine nuts
Layer 7: sliced scallions
Garnish with drizzled olive oil and salt and pepper to taste. Serve at the big game with pita chips. Make sure you get all 7 layers on your chip. Try not to hog the entire bowl – leave room for some of our other great Super Bowl recipes. Now for the instructions…
Mediterranean 7 Layer Dip Recipe
Prep Time: 10 to 15 mins
Ingredients:
17 oz container hummus (we like Sabra brand)
1 cup homemade homemade tzatziki (you can use store bought too!)
2 plum tomatoes, diced + drained
1 6 0z can sliced black olives, drained
1 cup crumbled feta
1/3 cup pine nuts
3 scallions, sliced
olive oil
salt & pepper
Spread the hummus on the bottom of a rimmed serving dish. Spoon the tzatziki on top and spread on top of the hummus. Top the tzatziki with a layer of tomato, black olives, feta, pine nuts and scallions. (We saved just a few pieces of tomato to throw on top so all the colors were showing.) Drizzle olive oil over the top and season with salt and pepper. Serve with pita chips.
PS: You can also substitute the tzatziki with Baba ghanoush for another great variation!

You really make it seem really easy together with your presentation however I find this matter to be actually something that I believe I’d by no means understand. It sort of feels too complex and very extensive for me. I am having a look ahead on your next submit, I will try to get the dangle of it!
Delicious and popular dip for cocktail parties! I add a layer of diced cucumber after the tomato and a layer chickpeas (about 2/3 of a can; drained & rinsed) after the diced olives. I use kalamata olives instead of black olives. When I drizzle the olive oil on the top, I also sprinkle some dried oregano. The leftovers are delicious inside a pita or wrap with some chicken or sliced turkey breast.
