Meatless Monday & Giveaway: Fennel & Orange Salad

Every February when I was a kid, I eagerly awaited the arrival of a giant box of citrus fruits shipped to us from Florida where my grandparents wintered. Sure, it contained oranges, but I was most interested in the pink grapefruit. My mother would unearth the special grapefruit spoons, slice a giant grapefruit in half and delight in every sour bite. I too would dig in puckering my way through secretly hating it but loving the shared tradition with my mommy.

Amazingly, all those years of choking it down and I still haven’t developed a taste for grapefruit. Never the less, I found myself at Whole Foods this week looking longingly at what I thought was a sliced open pink grapefruit… until I realized it was actually an orange with a tag that read “Pink is the new orange.”

Pink navel oranges!!! I immediately started filling my cart having no idea what I’d do with them. I just knew I had to have them. My kid, however, knew exactly what he wanted to do with them. I must say, they weathered his juggling very well.

After paging through a few different cookbooks, I found an amazing looking citrus salad in The America’s Test Kitchen Healthy Family Cookbook. The cookbook came to me via a friend of friend who actually works at America’s Test Kitchen. (Jealous!)

After much success with this salad, I made a few more Healthy Family Cookbook inspired recipes. So far, everything has been deelish. So yummy that I asked for an extra copy of the book to give away.

Now for the recipe…

Fennel, Orange & Olive Salad
adapted from The America’s Test Kitchen Healthy Family Cookbook

Prep Time: 8 mins

Ingredients:
5 teaspoons extra-virgin olive oil
4 teaspoons fresh lemon juice
2 oranges, peeled and cut into 1/2 inch pieces
1 fennel bulb, tops discarded, halved + sliced thin
1/4 pitted black olives, sliced
3 tablespoons fresh mint, minced
salt and pepper

Whisk together the oil, lemon juice, salt and pepper to taste. Spread the fennel out on a platter. Top with orange slices and then sprinkle with mint and olives. Drizzle dressing over entire salad. Serve immediately or store in fridge for up to 1 day. Makes 4 to 6 servings.

    Just found your blog and realize there is way too much to look at so I will definitely be back. This recipe caught my eye until I decided that I didn’t know how to cut up fennel or “tops discarded”….didn’t know they even had tops. Excited to learn more about fennel.
