Easter Inspriation: Spinach & Strawberry Salad with Perfect Poppyseed Dressing
My family requires a salad at every meal. What can I say, we love our greens! We also love our fruit so I decided to combine the two and create a beautiful, fresh salad that we were thinking of serving on Easter Sunday. (It’s almost a pretty as decorated eggs!)
My daughter thought I was crazy to put strawberries and spinach together, but she was willing to give it a try. Perhaps she just wanted the opportunity to slice some strawberries.
This salad is so easy to make Sylvie was able to make the entire thing by herself, even washing and slicing the strawberries!
The only assistance she needed was when it came to measuring the ingredients for the dressing. This made her very proud and excited to try it.
She loves the salad and ate the entire bowl and gave it the official Easter approval!
Spinach & Strawberry Salad with Perfect Poppyseed Dressing
Pre Time: 5 minutes
7 oz bag spinach
1 pint strawberries, washed, stems removed and sliced
1/4 cup sliced almonds
1/2 cup canola oil
1/4 cup cider vinegar
1/4 cup honey
1/2 teaspoon onion juice or finely grated onion
1/8 teaspoon salt
1/8 teaspoon mustard powder
1 tablespoon poppyseeds
pinch of paprika
Place spinach, strawberries, and almonds in a bowl. In a separate bowl whisk oil, vinegar, honey, onion juice, salt, mustard, poppyseeds, and paprika. Pour over salad and serve immediately.
Makes: 4 servings
