Swell Supper: Soup and Biscuits for the Soul

I’m such a lover of soup and so is my family. We’ve even been known to cook up a bowl of hot goodness even during the heat at the height of summer. And there is nothing so satisfying as a warm bowl of soup on a cold fall day, which we’re getting an early taste of here in Los Angeles. It’s making me and my family want to get cozy with a bowl a soup and some warm bread. So for this weeks Swell Supper we are cooking up some Roasted Cauliflower Soup, Broccoli and Cheddar Biscuit Muffins, with a Grilled Fruit Crisp for dessert.

Get started with the roasted cauliflower soup. Prep the cauliflower and place in the preheated oven, continue with the recipe until it’s time for the soup to simmer for 30 minutes. While the soup is simmering turn the oven down to 400 degrees F and make the broccoli cheddar biscuit muffins and the grilled fruit crisp (ps, we are using the oven). Place the biscuits in the oven and go back to the soup, blend in batches or use an immersion blender until smooth.

Remove biscuits from the oven and turn temperature down to 350 degrees F and place the fruit crisp in. Serve the warm biscuits with the warm soup and get cozy with your family. The fruit crisp should be done, take it out of the oven and give each person a bowlful with a scoop of ice cream. Now doesn’t that sound swell?
