My daughter is so into cooking she’s authoring her very own cookbook. And she’s just 5 1/2! Some of the recipes are original and believe it or not, edible, too. And they remind me of tapas so this week we’re having a small plates party. Tapas will include Caprese Turnovers, Spinach Pockets, Quiche Cups, Bite Sized Greek Salad, and Cheater Apple Caramel Cake for desert.
Start with the caramel apple cake and put it on a rack just above the center of the preheated oven. While the cake is cooking prep the ingredient for the quiche and place it in the oven on the lower rack, below the cake. Both the cake and quiche should be done at the same time. (Keep in mind that there are several small plates of food to serve so if your family is small feel free to cut the recipes in half.)
Meanwhile prep the caprese turnovers and spinach pockets for the oven. When the quiche and cake are done take them out and turn the oven up to 400 degrees F. Place the spinach pockets in the oven on the upper rack and set the timer for 10 minutes.
Now get started on the bite sized Greek salad. After 10 Minutes place the caprese turnovers on the lower rack and set the timer for 15 minutes.
Finish the Greek Salad and cook the caramel sauce for the cake and let it cool. Remove the spinach pockets and caprese turnovers from the oven and place all the tapas on the table for everyone to enjoy. Now doesn’t that sound swell?
