Sesame Cold Noodles with Zucchini & Cabbage
It’s been a ca-razy day today and I’m just getting around to posting the latest Perfect Picnic recipe. These Sesame Cold Noodles are one of my all time faves because they get better with time and taste great at room temp.
The cabbage and zucchini add a nice little crunch to the dish but the flavor comes from the awesome gingery, peanut buttery dressing. The adults dug right in while the kids ran around the park only half listening to the music in the background.
The only thing wrong with this recipe is that there’s never enough left over. What’s your favorite picnic pasta dish?
Sesame Cold Noodles with Zucchini & Cabbage Recipe
Prep Time: 15 mins Cooking Time: 7 mins
Ingredients:
1 pound spaghetti (we use whole wheat)
2 small zucchinis, shredded
1 bag shredded green cabbage
1/2 cup vegetable oil
1/4 cup apple cider vinegar
3 tablespoons soy sauce
1 1/2 tablespoon sesame oil
1/2 tablespoon honey
1 garlic clove, minched
1/2 teaspoon peeled, grated fresh ginger
1/4 cup smooth peanut butter
1 teaspoons kosher salt
fresh cracked pepper
sesame seeds
1. Place cabbage and zucchini in a large bowl and set aside.
2. Cook pasta til al dente in a large pot of boiling water. (About 7 to 8 minutes)
3. Meanwhile, whisk together oils, vinegar, soy sauce, honey, garlic, ginger, peanut butter, salt and fresh cracked pepper.
4. Drain pasta and transfer to bowl with zucchini and cabbage. Pour dressing over pasta while it’s still warm and toss to coat.
5. Garnish with sesame seeds to taste. Chill in the refrigerator for at least 2 hours before eating.
Serves: 8 to 10

My favorite picnic dish is my mom’s pasta salad (secret ingredient is western dressing) and cold fried chicken.
I will def be trying this recipe!
My favorite pasta salad dish is made with rotini, pesto, feta cheese, toasted pine nuts and dried cranberries. So yummy!

Orzo salad with sundried tomatoes, feta, and other veggies is also great cold at a picnic!
I like making orzo with feta, grape tomatoes and kalamata olives.

I love orzo with feta, cucumbers, and grape tomatoes, dressed with simply lemon juice and olive oil. Way refreshing and EASY to prepare!

Almost any kind of salad is great for picnics – pasta & potato salads especially. I also make a couscous salad w/ chopped walnuts, apples & peas & a chickpea salad w/ tomatoes, cukes, scallions & parsley.
I make a yummy salad with roasted pumpkin (butternut squash), baby spinach, toasted pepitas and quinoa. You could substitute quinoa with orzo Dress it with lemon juice and zest, EVOO and a smidge of dijon mustard. yum!
I just make up a new creation that I think would be fab for a picnic. I mixed together english peas, caramelized onions, goat cheese, a couple of sun dried tomatoes in olive oil, and just a little pesto and serve with sliced bread or crackers.

last night I threw this salad together: whole wheat couscous, chickpeas, feta cheese, radishes, cucumber, sweet red pepper, black olives, red onions dressed with a bottled sun-dried tomato dressing. served it over spring mix greens.
A quiona salad with corn (uncooked, just cut from the cob), tomoatoes, cilantro, scallions and avocado. Dressed with olive oil. Yummy! Also good with orzo.
I make a fruit salsa with cinnamon chips!
