Oatmeal 2 Go
My kids both love oatmeal but sometimes we just don’t have the time to sit down and eat a whole bowlful. Granola bars don’t do the trick for my hungry 5 year old, but when Macki told me about these awesome oatmeal bars I knew we’d have an instant hit.
The great thing about these bars is that they taste just like oatmeal – like if you could pick up a bowl of oatmeal and take it along with you without any mess, they’d taste like this. My kid was so excited that twice I had to chop extra apples to replace the ones he’d snacked on while we were cooking.
Both kids went wild for these very dense, moist Oatmeal 2 Go bars. We had them for breakfast, lunch and dinner and had to make another batch the next morning. Macki, you are a genius! Now for the recipe…
Oatmeal 2 Go Recipe
Prep Time: 8 mins Cooking Time: 30 to 35 mins
Ingredients:
1 medium apple, peeled + diced small
1 teaspoon granulated sugar
1 teaspoon cinnamon
1 cup whole wheat flour
1 cup unsweetened apple sauce
1 tablespoon melted butter or canola oil
1 teaspoon baking powder
1/2 cup almond meal
2 tablespoons brown sugar
1 1/2 cups old fashioned oats
1 egg
1 cup lowfat or nonfat milk
1 teaspoon vanilla
cooking spray
Preheat oven 350 degrees. Place diced apples in a small bowl and toss with cinnamon and sugar. Set aside. In a medium sized bowl combine egg, milk, applesauce, vanilla and canola oil. In another bowl whisk together flour, almond meal, brown sugar and baking powder. Gently combine the wet and dry ingredients. Add oats and diced apples and stir to combine. Pour batter into well greased 9 inch square baking pan. Spread batter evenly and bake for 30 to 35 minutes or until set. Let cool and cut into squares.

Rebecca – Macki – i can't get almond meal here… do i *have* to have that or can I substitute something else?! I really want to make these for my little man to eat by himself!!
I had the same question as Karilyn. These look great, but i don’t have almond meal handy…can i substitute flour?
Almond meal just gives it added health and a bit of flavor. You can make almond meal by placing plain almonds in a blender and mixing until it becomes flour like. If there are nut allergies, just add 1/4 cup more oats and 1/4 more flour and add an extra tablespoon of oil.

[…] your child is ok-ed to eat almonds, I highly recommend this recipe: Oatmeal 2 go. My son is picky, but LOVES this. It’s chock full of good stuff, very low on the bad stuff, […]
I made these this evening for tomorrow’s breakfast, and couldn’t resist having a sample while they were still warm. SO. GOOD. I did add a bit more brown sugar to suit our tastes. Also I didn’t have sufficient almonds for 1/2 cup of meal, but added some Craisins and good old Okie pecans. I will certainly make these again!
These look great! How long will they keep? And can they be frozen and thawed without sacrificing quality?
I make 2 batches at a time and freeze them all. We defrost 1 or 2 squares (or triangles, depending on my mood) in the morning, and eat these for breakfast 3-5 mornings a week. My son loves them and I’m pleased to be giving him something with a lot of balance (low sugar, good fiber, some protein, some fruit).
By the way, now that my son is older (2.5), I stopped peeling the apples to save time and find that these are even tastier with the apple skins on!
I have a daughter who is wheat intolerant what can I substitute the wheat flour with?
