Super Bowl Series: Savory Cheddar Cookie Crackers

Here’s the thing: it looks like a cookie but tastes like a cracker. When my friend recently described them to me, I insisted she cook them with her kid for the blog. I’ll let her tell you more… take it away, Susan!

Hi. Susan here. My Nana was a masterful hostess.  Can you say porcelain dry-erase place cards?  She knew how to word every invitation, set a stunning table, chill a high ball…and throw a killer tailgate. Really.  It was a different era, and although I don’t know her to have ever hosted a Super Bowl party, but she put together an amazing spread (and, not surprisingly, a beautifully appointed folding table!) for every home football game of my grandfather’s alma mater.

These cheddar “cocktail” crackers were always a favorite, just like Papa Teete’s lucky home-game plaid pants! I can’t believe how kid friendly this recipe is – no raw products, so no parental worrying if mid-mix snacking happens!  And I had my little cooker at “put your hands in the bowl!”

That’s Nana’s good ol’ fashioned Pyrex mixing bowl, and we served them on Nana’s plates. We do what we can to channel the hostess with the mostest. Now for another great Super Bowl Recipe…

Savory Cheddar Cookie Crackers

Prep time: 5 minutes  Cooking Time: 10 to 15 mins

Ingredients:
2 cups flour
2 sticks butter softened
2 cups grated sharp cheddar cheese
2 cups crispy rice cereal (Rice Krispies!)
dash of cayenne pepper
dash of paprika
salt & pepper

Allow cold ingredients to come to room temperature.  Preheat oven to 400°. Combine butter and cheese well with spoon or hands.  Mix in flour, cayenne and paprika. Add salt and pepper to taste and fold in rice cereal. Roll into small balls and flatten; place on cookie sheet.  Bake 10-15 minutes.  Let cool fully before serving; store in an airtight container or freeze. Be forewarned that these crackers are quite dry and flaky (hello, butter!), not moist and chewy like a cookie. Makes approx 40 savory cookie crackers.
