Caprese Turnovers
I think by now you know about my obsession with Trader Joes. What you don’t know is that they have a relatively new product that I’ve been keeping in my freezer at all times. It’s so versatile; it can be made into appetizers, dinner or dessert!
It’s this puff pastry dough and it comes in very handy when you’re having people over at the last minute. It’s pretty much the equivalent of Pepperidge Farm Puff Pastry but it’s square (not rectangular) and is made from ingredients I’ve actually heard of. Imagine that! Just flour, water, butter, sugar and salt.
The sheets only need to defrost for 10 minutes before you turn them into a meal. My kid just loves painting them with an egg wash and my vegetarian husband just loves any good caprese recipe. The hint of sugar in the dough combined with the savory filling creates a taste sensation. Perfect as appetizers or as a vegetarian option for company. Now for the recipe.
Caprese Turnover Recipe
Prep Time: 5 mins Cooking Time: 15 mins
Ingredients:
2 sheets puff pastry, thawed for 10 mins
egg wash (1 egg mixed with 1 tablespoon water)
4 roma tomatoes, sliced
8 oz fresh mozzarella, sliced in rounds then in half
16 small basil leaves
salt and pepper
Preheat the oven to 400 degrees. Cut each pasty sheet into 4 equal squares and transfer squares onto a Silpat (or parchment) lined baking sheet. Brush all squares with egg wash and fill each square with a 2 to 3 slices of tomato and a slice or two of mozzarella. Top each caprese with 2 basil leaves and then add fresh cracked pepper and salt to taste. Fold the pasty over to form a triangle and seal the edges with your fingertips. Egg wash the top and poke a small vent hold in the top with a knife. Bake for 15 minutes or until golden brown. Inside will be very hot so cool slightly before eating. Makes 8 turnovers.

Why, oh why, do I not have a Trader Joes? Trader Joes please open more stores.
seriously. I feel ya! The closest one to me is either three and a half or four hours away. I am so glad to finally see a premade puff pastry that isn't totally nasty. Thanks for the tip!

I was there this week looking for something like this, and ended up with crescent rolls instead. Boo. Thanks to you, I'll look a little closer next time! Are they by the pizzas or desserts?
The puff pastry is a winter/ holiday ONLY product. I learned this the hard way last year when I became addicted to it. Who can resist chocolate turnovers on a weekend morning? I've been stockpiling it in my deep freezer now since it came back in October.
At least it was a winter/holiday only product when it first came back into stock. I made the very helpful desk people call TJ's corporate to find out.
It also makes really decadent sausage rolls with Gimme Lean veggie sausage.
