Rabbit Smoothie

Imagine my surprise when my kid came bounding into my bedroom at 6:30am begging to make a smoothie for breakfast. It wasn’t so much the hour that was surprising (unfortunately) and it wasn’t so much the smoothie request that was surprising it was one the ingredients he requested that blew me away.

He asked to make a smoothie using whole carrots. He wanted to start off the day quick like a rabbit. I was a little skeptical thinking he wouldn’t like it, but I obliged.

He eagerly filled the bender and watched intently as the carrot chunks swirled around turning to pulp. Even as he took his first sip I wasn’t sure that the cooking experiment would be a success, but it turns out he knew what he wanted. He sucked the entire cup down and asked for seconds. Rabbit Smoothie Recipe

Prep Time: 5 mins

2 carrots (washed + cut into inch long pieces)
1 banana
1 cup strawberries (fresh or frozen)
1 to 1 1/2 cups orange juice
1 cup ice cubes

Blend fruit, carrots and orange juice together until smooth. (Start with 1 cup of juice but add more if the blender gets stuck.) Add 1/2 the ice and blend until smooth and then add the other 1/2 and blend again until smooth. Makes 2 large smoothies.

Note: If you don’t have an industrial type blender, I recommend dicing the carrot before blending.

    What a great idea! Love the color. Wonder if my thousand-year-old blender can handle big chunks of carrot like that…

    It should work if you chop up the carrot as if you were going to put in it a salad. It's really tasty.

    That is one lucky boy ~ with a Mama who will let him learn and grow in the kitchen like that! I bet he'll be a very creative chef some day!

    That is great he thought of that himself. Here in Italy they have a drink called ACE. It is carrots, lemons and orange juice. ACE stands for Vit A, C and E. The kids like it and don't even taste the carrots.

    Before I got my professional blender, I would buy bags of Trader Joe's shredded carrots for smoothies. Worked perfectly!

    What a smart idea he had!
    My kid isn't a big fan of carrots, but I'm going to try this to see if this isn't the ticket to win her over.
