Waffle Iron French Toast
When we’re in a rush and we want that home cooked breakfast feeling, we turn regular old wheat bread into Waffle Iron French toast. I love it because it’s easy but my kid L-O-V-E-S it because it transforms bread into waffles.
All we do is cut off the crusts of some bread and then whisk up a couple of eggs and some milk in a shallow bowl or baking dish.
We add syrup at this stage instead of drizzling it on at the end. That way my kid can take the waffle in the car if he wants but still have that syrup taste. Then we dip the bread in and cook it on the waffle iron.
We finish it off with a dusting of cinnamon powdered sugar.
The result is an incredibly satisfied customer. Now for the recipe…
Waffle Iron French Toast
Adapted from this Family Fun Recipe.
Prep Time: 5 mins Cooking Time: 5 mins
Ingredients:
4 slices bread, crusts removed (any kind will do, we use whole wheat)
2 eggs
1/3 cup lowfat milk
1 tablespoon maple syrup
1 teaspoon powdered sugar
1/2 teaspoon cinnamon
Mix powdered sugar and cinnamon together and set aside. Preheat your waffle iron. In a shallow bowl whisk together eggs, milk and syrup. When iron is ready, dip a piece of bread in the egg mixture. Flip it over and make sure the entire piece is coated. Spray your waffle iron and place slice of bread directly on iron. Cook each slice on iron until brown and crispy. Sprinkle with powdered sugar mixture and serve. Makes 4 slices.

I would have never thought of this approach but it combines my kids' two favorite breakfast items into one (and mine to be honest). I can't WAIT to make it this weekend.
Now I can finally use my waffle iron again, since this is such an EASY recipe!

We also made this a while back and it is a favorite! I make a bunch and keep them in the freezer for weekday mornings.

Made this today. Delicious and I love the fact that its whole wheat bread rather than just waffle mix. We left on the crusts – don't know if this makes a difference, but it worked just fine.
I think my husband would LOOOOVe this!
Sigh, I need to get a waffle iron, and Viv needs to start eating breakfast!

This was MY mom’s Christms breakfast back in the 60s. We sprinkle the p sugar/cinnamon mixture before cooking and add crumbled pecans! So yummy and perfect for Christmas morn! Nice job of channeling my mom.
