Snack Time: Turkey Cucumber Wheels

I imaged these Turkey Cucumber Wheels as open-faced cucumbers with a dab of cream cheese topped off with a bit of shaved turkey, but my kid had other plans. He turned the idea into these mini sandwiches. They’re a little more messy this way (cream cheese makes them slide a bit) but just as good.

It’s a great snack that has just the right amount of protein to keep my kid satiated until dinner. The trick is using small cucumbers (like Persian or Kerby) and whipped cream cheese so it’s soft enough to spread on the cucumber…

Turkey Cucumber Wheels Recipe

Prep Time: 5 mins

Ingredients:
1 small cucumber (like Kerby or Persian)
1 to 2 tablespoons whipped cream cheese
1 to 2 slices deli turkey (the more thinly sliced the better)

Cut cucumber into rounds. If doing open-faced wheels use a small spoon or knife to spread cream cheese on each piece. Cut or break each slice of deli turkey into 5 or 6 pieces and divide it evenly among the cream cheese topped cucumber and eat. Alternatively, only spread cream cheese on 1/2 of the cucumbers, top with turkey and another round of cucumber to form a sandwich.

    This sounds so yummy! Last summer, when we had tons of Armenian cucumbers and cherry tomatoes, I lived on cucumber-cream cheese-tomato bites. I got tired of trying to spread the cream cheese, so I plopped it into a plastic baggie, cut a corner off, and piped it onto the cucumbers. It was a little easier that way. My MIL slices the cream cheese and puts on little squares–she must freeze it for a few minutes first or something.

    oh that looks GOOD! My kids love cucumbers and cheese rolled up in turkey so I'm sure they'd eat this! Of course this year they won't eat cherry tomatoes unless I give them cream cheese with it… I like another posters idea of cukes, tomatoes, and cream cheese.

    You had my son at "turkey". Then lost him at "cucumber". Maybe I can get him to try it if there's no top on the sandwich, and if the turkey and cream cheese hide the bottom slice. Or I will just eat it.
