Snack Time: Crunchy Roasted Chickpeas

Chickpeas aka Garbanzo Beans are low in fat and an awesome source of fiber and protein. Most people enjoy them whipped up into a nice hummus, but in our house we’ve been known eat them straight out of the can. This time we wanted to do something a little different.

We had great fun splashing around while we washed them.

We picked through them to remove loose skins, patted them dry and then spread them out on a nice big Silpat lined cookie sheet. We sprayed them with a little cooking spray, roasted them and then finished with a bit of sea salt.

They were such a big hit I could barely snap a picture in between my kid picking chickpea after chickpea out of the bowl. This after school snack recipe is a keeper for sure…

Crunchy Roasted Chickpea Recipe

Prep Time: 5 mins  Cooking Time: 35 mins

Ingredients:
1 can chickpeas
olive oil cooking spray
pinch of sea salt or kosher salt

Preheat the oven to 400 degrees. Drain and wash the chickpeas. Pick off any loose skin. Pat dry and spread out over a Silpat on a rimmed cookie sheet. Spray lightly with olive oil cooking spray and place in the center rack in the oven. Cook for 15 to 20 minutes and then give them a good shake. Continue to cook for another 15 to 20 minutes or until chickpeas are firm and crispy but not burned. If they aren’t crispy, keep cooking. They’re best when the crunch! Remove from oven, sprinkle with salt and then let cool.

    i make these all the time. they are the best snack {although i LOVE them warm right out of the oven}. i always try to season them differently and last night i made them with some lemon juice and sea salt. so delish!

    You're inspiring me to try these again. I tried them once, but I don't think I baked them long enough, so they weren't as crispy as I imagined. Great protein-filled snack, though!

    This sounds great! And I love the idea of mixing up the seasoning. I bet coriander seed or cumin would be good too.     My husband loves these but usually I use a tablespoon or two of oil. I am going to try with the cooking spray to reduce the amount of oil. My hubby likes to call them "crack beans" because he gets addicted to them.

    I am sooooo excited to try this! I have cans and cans of these beans and no plans for them. (Well, I had planned on putting them in the salads I was going to live on for my diet, but…well….you can guess how that turned out, seeing as there are still so many cans in my cupboard!) I think my 3 yo would actually eat these, too! He's 95% more willing to try simply because you put Batman in the photographs, so thanks for that 😉

    These were delicious! They boys thought that they were eating chips! They were like a cross between corn-nuts and just popped corn kernels. I think I will salt them initially since the salt didn't really stick after. Thanks for sharing!!

    I make these with olive oil, lemon juice and sea salt. My kids and I can't get enough of them! They are great leftover in fridge, too. I like the idea of leaving them in longer till they're crunchy. Gonna try that.
