Lunch Bunch: Yogurt Parfaits & Cream Cheese Sushi

The other night I was out to dinner with ‘the girls’ from preschool. ‘The girls’ (aka other preschool moms) were talking about how they wind up packing the same lunch every day for their kiddos. This struck me as the perfect opportunity to get creative when it comes to making lunch. Here’s my commitment to you girls: Every day for the next 5 days we’ll post 2 new lunch ideas. That should give you ladies two weeks worth of things to pack!

I got these new lunch box containers from a company called Easy Lunchboxes. They come in a set of 4 and they are made of BPA free plastic. Easy Lunchboxes was started by a mom and these containers are brilliant. I’m no longer using baggies (that wind up in landfills) and I’m done searching for all different sized containers each morning. Everything fits right in. Plus, having a set of 4 makes things ultra convenient because I don’t have to wash it at the last minute when I’m trying to get out the door. This Build Your Own Parfait Lunch is so easy to put together that it shouldn’t even count as something we made.

But, I’m counting it anyway because we did make up a batch of Homemade Granola.  You don’t have to use our granola, you can use store bought, I won’t tell!

Build Your Own Yogurt Parfait Lunch:
Granola
Fresh Berries
Plain or Vanilla Yogurt
Apple Sauce (if using plain yogurt)
Spoon

Instruct your kid to remove the yogurt and applesauce from the containers and pour them into a bowl you’ve provided. In our case, my kid uses the compartment right in the easy lunchbox container! Your kid can layer ingredients using yogurt, applesauce, granola and fruit and then eat. So fun and crazy delicious. Check out our Cream Cheese Sushi Lunch

Okay, it’s really nothing like sushi but my kid L-O-V-E-S calling it that so that’s what we call it. It’s so simple to assemble. Here’s what you need.

Cream Cheese & Jelly Sushi
2 pieces wheat bread
cream cheese
jelly

Cut off the crusts and roll out the bread with a rolling pin. (Notice the dog observing my kid’s work? She’s really just hoping something will drop.)

Spread cream cheese on each slice.

Spoon jelly in a strip down the center of the bread.

Carefully roll up the bread and seal it with a bit more cream cheese if need be. Then take a sharp knife and cut it into sushi pieces. As you can see here, we served our sushi with carrot and cucumber sticks, blueberries and some organic gummy bears.

    Your parfait lunch looks just like what I usually eat for breakfast! (minus the applesauce) What a fun lunch to pack. I'm experimenting with my granola recipe to use seeds instead of nuts because my school is nut-free.

    fabulous! we're completely stuck in a lunch rut. I thought I had to provide lunch to my daughter this year at school, but turns out that since I pick her up at noon, I don't have to worry about it. That doesn't mean that I'm not trying to get a better grip on fixing lunches. I also LOVE the Bento lunch boxes. I almost bought a different one, but I love that they come in a set of 4 so you're not washing everything every night. I'll have to start experimenting with having these lunches ready for my little one when she walks in the door or as a wonderful picnic option.

  17. With havin so much content and articles do you ever run into any problems of plagorism or copyright violation? My site has a lot of unique content I’ve either created myself or outsourced but it seems a lot of it is popping it up all over the web without my agreement.
