Breadless BLT with Buttermilk Dressing

So many of you loved our Bite Sized Greek Salad post that we decided to make another fun little hand held salad! The idea really started with the Grilled Maple Turkey Bacon, followed by a quick survey of ingredients already in the fridge and the Breadless BLT recipe was born. My kid was beyond fascinated by the lettuce cup and jumped at the chance to use the avocado slicer.

Yes, I do know that BLT purists would shun the avocado, but I live in California! We add avocado to everything. No, my kid did not eat the tomatoes. But, he couldn’t get enough of the avocados and bacon together. This turned out to be such a fun, easy starter that I’m definitely putting it on the menu for my next party. (By the way, we used veggie bacon on my husband’s portion.) Now for the recipe…

Breadless BLT Recipe

Prep Time: 10 mins  Cooking Time: 20 mins

Ingredients:
2 cups cherry or grape tomatoes (halved)
2 avocados (cubed
6 slices turkey bacon
maple syrup
1/3 cup buttermilk
3 tablespoons real mayo
2 tablespoons apple cider vinegar
4 iceberg lettuce leaves
salt & fresh cracked pepper

Start by preparing the Grilled Maple Turkey Bacon. Meanwhile, in a medium bowl combine avocado and tomatoes. Set aside.  In small jar combine buttermilk, mayo, vinegar and salt and pepper to taste. Shake to combine. When the bacon is done, chop or tear it into bite size pieces and toss with the avocado and tomatoes. Divide the avocado tomato and bacon mixture evenly into the lettuce leaves. Shake the buttermilk dressing again and use a small spoon to drizzle on top. Serves 4.

    Looks delicious! I think I'll substitute the tomatoes for red pepper. I may be the only one out there who eats BLPs but they are great.
