Gooey Marshmallow Brownies

We had some folks over for a BBQ this weekend and I planned to make old-school boxed brownies but my kid loves marshmallows so much that he asked to make something with them. (Truth be told, I think he just wanted to be able to eat the marshmallows while we were cooking.)

These brownies are super easy to make but they are really difficult to cut. The marshmallows stick to the knife – so be sure to use a liberal amount of cooking spray on your knife before cutting into squares. Be patient. It’s worth it. Now for the recipe…

Marshmallow Brownie Recipe

Prep Time: 10 mins  Cooking Time: 45 mins

Ingredients:
1 box Ghirardelli  brownie mix
2 cups mini marshmallows
1/2 cup semi sweet chocolate chips

Make brownies according to package instructions. Remove from oven and sprinkle top first with marshmallows and then chocolate chips. Return to oven for 2 to 5 minutes or until marshmallows just start to melt and brown. Let cool completely before cutting into squares. Be sure to check out cutting tips above.

    I can bake, but I love Ghirardelli brownie mix!!!
    I just bake it extra because I prefer them not gooey.
    But what you have done?

    Every time I come to your blog I get cravings for the lovely yummy things I see…then have to fill that craving with something from the local Tescos, which could never be as good and almost always leaves me disappointed. Not to self: Must start baking on the weekend, must bake these! YUM!

    If you get the knife wet with warm water first, the marshmallows are a cinch to cut. We just made similar brownies last week! Yummy.

    Brownies with marshmallows on top look fantastic. I have got to try this, never used the Ghiradelli mix before., will definitely try.

    i made these with my little sister on a snow day they were so warm and fun to make try serving the with pepermint hot chocolate it was amazing!!!!!

    made the “Gooey Marshmallow Brownies” but i didnt read all of the instructions so i put marshmallows in with the raw brownie mix in the oven…they wernt verry good o well live and learn
