Baked Banana Nut Oatmeal

This morning we woke up to some overly ripe bananas and since we’ve already made banana bread (2x) and banana muffins, I suggested we mash them up in some oatmeal. My kid responded with “how about baked oatmeal?” and a new breakfast recipe was born!

My kid loves it when we bake a really big batch of oatmeal so that he can have it for several mornings in a row. He really liked the Peaches & Cream Oatmeal we made, but now it has some competition! The last thing he mentioned before drifting off to sleep tonight was having more baked banana oatmeal in the morning. This kind of oatmeal lasts for several days in the fridge and gets more and more casserole-like as the days progress. Now for the recipe…

Baked Banana Nut Oatmeal Recipe

Prep Time: 10 min  Cooking Time: 30 to 35 mins

Ingredients:
5 cups water
3 cups rolled oats (not instant)
pinch of salt
1 cup lowfat or nonfat milk
1 egg (or 2 egg whites)
3 ripe bananas
3 to 4 tablespoons brown sugar
handful of chopped pecans
handful of raisins

Preheat the oven to 375 degrees. Mash the bananas very well and set aside. Bring 5 cups of water to a boil, add oats and salt and turn down the heat. Cook until all water is absorbed and oats are done. Remove from heat and transfer to a large bowl. Stir in milk. Crack the egg in a separate bowl. Temper the egg by scooping a small spoonful of hot oatmeal into the egg bowl and whisking the two together. Do this 3 or 4 times until the egg is at the same temp as the oatmeal. Once tempered, combine the egg with the rest of the oatmeal. Pour 1/2 the oatmeal into a greased 9×13 pan. Sprinkle oatmeal with 2 to 3 tablespoons brown sugar. Place dollops of mashed banana on top of the brown sugar and then spread evenly with a spatula. Sprinkle pecan pieces on top of the banana. Pour the rest of the oatmeal on top of the banana and carefully spread it so that it covers all the bananas and nuts. Sprinkle the top layer with raisins and remaining brown sugar. Bake for 30 to 35 minutes or until set. Let stand for 5 minutes before serving. Serves 6 to 8.

    I looked at your Peaches and Cream recipe, which is a little different. Which method do you prefer–baking soda and uncooked oats or cooking the oats first?

    They are both really very good. I made the oats first for the banana recipe so that I could layer the banana, nuts and brown sugar in between the layers of oatmeal. (The bananas were way too soft to put on top like I did with the peaches.) I

    I need to buy some rolled oats (vs instant) but we always have extra bananas in the freezer. This looks amazing and anything to make breakfast easier on subsequent days totally works for me. Thanks!!

    Could this be assembled the night before cooking? I'm thinking it could be, but do you see a problem with that plan? I would like to make this with my grandchildren, but since I don't live with them I couldn't do an early morning run.

    Yes. It's the perfect thing to assemble the night before. Put it all together and then put the the raisins and brown sugar on top right before you put it in the oven.

    Just FYI, I made this this morning (well, put it together last night and baked it this morning), and since I didn't want to get another pan dirty, I did the uncooked method for the oats. What I ended up doing was mashing the bananas well, adding the brown sugar and nuts to the banana, and then dumping the banana on top of the oat mixture. Then I just took a butter knife and swirled everything up. I didn't incorporate it, just made sure the banana sugar mixture would be throughout the servings. It was AWESOME. My kids love the apple version, and thought this one was even better. The only other thing I changed was a teaspoon of cinnamon in the oats.
