Easy Cheater Pumpkin Pancakes

It’s Trader Joe’s week and we have discovered that we can make the most delicious pumpkin pancakes from a box! I know this is hard to believe because boxed pancakes are generally super offensive, but adding a few extra ingredients to this make it so unbelievably good. My kid likes to have them silver dollar sized and I’ll take them any way I can get them.

Easy Pumpkin Pancake Recipe

Prep Time: 5 mins Cooking Time: 10 mins

Ingredients:
1 cup Trader Joe’s Pumpkin Pancake Mix
2 tablespoons melted butter
3/4 cup lowfat milk
1 egg lightly beaten
2 tablespoons pureed pumpkin
1 teaspoon vanilla extract

In a medium bowl, whisk together egg, pureed pumpkin, milk, vanilla extract and melted butter. Add pancake  mix and whisk until just combined. Do not over mix. Grease a frying pan with cooking spray and place over medium heat. Spoon small amounts of batter into frying pan to make silver dollar sized pancakes. Flip when pancakes begin to bubble. Serve with butter and syrup. Makes 12 to 16 silver dollar sized pancakes.  Deelish!Print Post

    I found your blog through a Daily Candy email today. I love the idea of making food with your kids. And I love the Trader Joes pumpkin pancake mix. I've got 2 boxes in my pantry calling my name. 🙂
