God Momma’s Healthy Waffles

My kid wanted to make waffles this morning so we called his God Momma, Anne, and asked her for her famous healthy waffle recipe. Anne told us it was the perfect opportunity to learn how to “fold in eggs” and she was right. My kid was fascinated by the fact that the clear runny eggs turned stiff and white… and he loved how fluffy the batter got once the eggs were folded in.

Prep Time: 12 mins  Cooking Time: 5 mins (depending on waffle iron)

Ingredients:
1 cup whole wheat flour
3/4 cup all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 egg whites
1 1/2 cup lowfat milk
1/2 cup canola oil
1 tablespoon pure vanilla extract
2 to 3 tablespoons agave nectar

Preheat waffle iron. Beat egg whites until stiff. In a separate bowl combine flours, baking powder and salt. In another bowl, combine milk, vanilla, oil and agave nectar. Add flour mixture and milk mixture together and stir to combine. Gently fold in egg whites. Pour onto hot iron and cook until light brown. Makes 6 to 8 large waffles.Print Post
